In my game mode, protecting your base from stealing would be ideal.
Is there a way, you could purchase a sentry during a game, and then place it in your base to deter other players from stealing from you?

You do not purchase them. In edit mode go to devices → search sentry.
I think they meant being able to make players purchase them.
Just connect a vending machine to a sentry via a wire. The sentry’s default should be not active. In the vending machine, set it to broadcast to a channel. In the wire, it should say Item Purchased- Activate Sentry.
