Unfortunately, Gimkit is always in 3rd person bc of the way the gim works
It is possible, you can use sentry as buttons.
Give the player a quantum portal, this would act as the cursor, when the sentry is eliminated it will act as a button and respawn. If you make everything with barriers and hid the player behind them it will look like if there in 1st person.

Oh??? Really, how???
You take 2 buttons and whatever prop you want the door to be and wire them together, for the open button you make it so when it is pressed, the prop disappears. And the opposite for the close button.

what clock? If it’s an in-game clock, then you can just use a property + overlay + counter system
