how do you get the sentry’s to stop fiering at/ giving damage to the players? Also can you take the sentrys wepon away or is there a different bot to use?
Once a sentry has a gadget, you cannot take it away, and no there is a not a different bot to use.
You could use a team switcher and area device, once the player enters area the player switches to sentry team. (For the sentry to stop attacking player)

Put a barrier on top of the sentry, or put the sentry on the same team as the player…
Make sure if you choose the barrier option to put it on a layer above the sentry, using the layers button at the top-left corner in the Gimkit Creative interface.

If you have season ticket you can use NPC
Player enters zone —> deactivate sentry
Player enters zone—>activate NPC
NPCs don’t use gadgets so it will technically take it away

You can switch it to team one for single player games (such as get a snack at 3am) and for multiple people have everyone be put in team one so they don’t attack them (building on everyones words and from my own experiences with my game)
