I mean I don’t think you can reskin sentries but you can use colored block like plastic or something for the places
There are 3 sentry skins. They might change this with the introduction of custom images but for now it is impossible

For the people you could make sentry NPC’s that either give you money or activate a laser that deals emotional damage.

Maybe have an airport that teleports them across the map.
For Ohio make an invisible maze with sentries or anything else that will annoy the player.
Some of the stuff you listed like bananas are already in the games. You could make a banana stall.
For the vegan teacher connect the button that interacts with her to a checker that checks for fish. If it finds one, 5 sentries activate around you.
Also have a rocket ship somewhere that teleports you to the planets.
