I am trying to add my own text to a vending machine in the place of the image in the middle. Is there any way to do this without a text device covering the vending machine?

just put text over the vending machine instead
you could use the pre-approved icons if it transmits on a channel. or just make the vending machine transmit on a channel and add text or item spawners layered above it
I was trying to avoid that but I guess it works.
