I’m planning on spending at least 7 months on a platformer game, but what should the theme/lore/theme be, should it be easy, not that easy, hard, or goes from easy to hard?

anyway, you should make it about skibidi toilet because that will be most effective on discovery and most likely to farm gimbucks. easy-moderate gameplay recommended.
You definitely need to make a game that goes from easy to hard because like if you go from hard to easy that doesn’t make sense and if the game’s difficulty remains the same all throughout the entire thing it’s boring.
