you can use a sentry for a zombie
what appearance should I set it to
evil plant or raveena
its up to you, however the sentries in the apocalypse mode are pretty zombie-ish, you can also use the plant zombies
there is no these zombie-ish skins, they are still not available as i think
if you want to make NPC’s that are friendly the ‘Crimson Cruz’ skin looks acopolyptic
there is also ‘Ozi’ but he is a mummy
I used the ozi skin it look most like a zombie to me

well, it depends on the lore of your map (if you have any) but usually zombie maps are deserted/abandoned areas or labs where an experiment messed up (which might have made the zombies)
