It works in One Way Out because Gimkit released that game, so they can add their own images.
Unfortunately, it isn’t really possible. Sorry!
Yeah, icon/ and items/ only works for Gimkit approved items and images.
Hopefully one day we’ll see this image come in an update to Creative!

If you have the season ticket, you can use the dialogue device and select any gim.
Yes, @kirbyking , the dialogue device is the only way to add a gim into a “popup” with the season ticket (which I don’t have

You can’t use file paths for images. items/xyz isn’t a file path because xyz does not have a file extension. The images that you have are probably from different gamemodes which is why they work. The sentry image on the other hand would not count as an item or an icon which is why that wouldn’t work with icons/ or items/. The gimgulp is in tag domination, but almost all props from other gamemodes are accessible in GKC, so it is used as an item instead.
